Teriyaki Salmon Bowls
My current go-to dinner — air fryer teriyaki salmon bowls with rice, edamame, cucumber, and avocado.

Ingredients
- 1/4–1/2 cup rice (uncooked)
- 4 oz salmon, cut into cubes
- Trader Joe’s Soyaki (opens external site) (or teriyaki sauce, for marinating)
- Cucumber, sliced small
- Rice vinegar, for marinating cucumber
- Edamame
- Avocado
- Extra teriyaki sauce, for drizzling (optional)
Instructions
- Cook the rice (about 1/4–1/2 cup per serving).
- Cut the salmon into cubes (about 4 oz per person). Marinate in teriyaki sauce (I use Trader Joe’s Soyaki) for about 10 minutes.
- Cook the salmon in the air fryer for 10–13 minutes at 390°F.
- Cut the cucumber into small slices and marinate in rice vinegar.
- Plate the rice and salmon, then add edamame, cucumber, and avocado. Optional: drizzle with extra teriyaki.
