Peanut Butter Banana Protein Bites

My new favorite high(er) protein sweet treat — peanut butter banana protein bites with a chocolate dip and sea salt.

Ingredients

  • 1 mashed banana
  • 3 1/2 tbsp PB2 powder (mixed with water)
  • 1 cup almond flour
  • 2 scoops PEScience Peanut Butter vegan protein (code KATHRYN)
  • 2 tbsp honey
  • Splash of vanilla extract
  • 1/4 cup semi-sweet chocolate chips (for coating)
  • 2 tsp coconut oil (for melting)
  • Sea salt, for sprinkling

Instructions

  1. In a bowl, mash the banana until smooth.
  2. Mix the PB2 powder with a small amount of water until it reaches a peanut-butter consistency.
  3. Add PB2, almond flour, protein powder, vanilla extract, and honey to the mashed banana.
  4. Mix until a thick dough forms.
  5. Roll the dough into 12 balls. Optional: refrigerate to set a bit more.
  6. Melt semi-sweet chocolate chips with a small amount of coconut oil until smooth.
  7. Dip each ball halfway into the chocolate and place on parchment paper. Top with a sprinkle of sea salt.
  8. Refrigerate until the chocolate sets.
