Honeynut Squash, Ground Beef, and Cottage Cheese Bowl

This has been my lunch on rotation all of fall!! The squash is SO good, and the cottage cheese adds some creaminess. This is easily meal prepped as well.

Ingredients

  • 120 g honeynut squash (cubed, skin on)
  • 3 oz lean ground beef (93/7)
  • 90 g 2% cottage cheese
  • 1/2 avocado (sliced)
  • 5 g honey
  • Garlic powder, smoked paprika, onion powder, salt, and pepper
  • Olive oil or cooking spray (as needed)

Instructions

  1. Air fry the squash: Cut the honeynut squash into bite-sized cubes, leaving the skin on (it’s edible!). Lightly coat with cooking spray or olive oil and season with salt and pepper. Air fry at 400°F for 20 minutes, shaking halfway through, until tender and caramelized.
  2. Cook the ground beef: Heat a skillet over medium-high heat. Add the ground beef and season with garlic powder, smoked paprika, onion powder, salt, and pepper. Break apart with a spatula and cook until fully browned, about 7–10 minutes.
  3. Assemble: Add the cooked ground beef, roasted squash, cottage cheese, and sliced avocado to a bowl.
  4. Finish: Drizzle 5g honey over the warm squash and enjoy!
