Higher Protein Banana Muffins
Easy high-protein banana muffins with Greek yogurt, peanut butter, and PEScience — about 8g protein each for a go-to snack.

Ingredients
- 1/3 cup nonfat Greek yogurt
- 2 bananas
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 tbsp honey
- 1 tbsp peanut butter
- 1 serving PB2
- 1 1/2 cups PEScience protein pancake mix (code KATHRYN)
- 1 scoop PEScience Peanut Butter Cookie protein
- 1/2 tsp baking powder
- 1/4 cup semi-sweet chocolate chips (optional)
Instructions
- Preheat the oven to 350°F and line a 12-cup muffin tin.
- Mash the bananas, then mix with the Greek yogurt, eggs, vanilla, honey, and peanut butter until smooth.
- In a separate bowl, stir together the PB2, PEScience protein pancake mix, Peanut Butter Cookie protein, and baking powder.
- Fold the dry ingredients into the wet until just combined. Stir in chocolate chips if using.
- Divide the batter evenly among 12 muffin cups.
- Bake 18–20 minutes, until a toothpick comes out clean.
