Higher Protein Banana Muffins

Easy high-protein banana muffins with Greek yogurt, peanut butter, and PEScience — about 8g protein each for a go-to snack.

Ingredients

  • 1/3 cup nonfat Greek yogurt
  • 2 bananas
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 tbsp honey
  • 1 tbsp peanut butter
  • 1 serving PB2
  • 1 1/2 cups PEScience protein pancake mix (code KATHRYN)
  • 1 scoop PEScience Peanut Butter Cookie protein
  • 1/2 tsp baking powder
  • 1/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin.
  2. Mash the bananas, then mix with the Greek yogurt, eggs, vanilla, honey, and peanut butter until smooth.
  3. In a separate bowl, stir together the PB2, PEScience protein pancake mix, Peanut Butter Cookie protein, and baking powder.
  4. Fold the dry ingredients into the wet until just combined. Stir in chocolate chips if using.
  5. Divide the batter evenly among 12 muffin cups.
  6. Bake 18–20 minutes, until a toothpick comes out clean.
